Pavlova is a dessert that’s often part of the Christmas day meal in New Zealand. It’s a crisp white meringue that’s top with fresh fruit and whipped cream.
Ingredients:
4 egg whites, 1 1/4 cups white sugar, 1 teaspoon vanilla extract, 1 teaspoon lemon extract, 2 teaspoons cornstarch, whipped cream, and mixed fruit any kind you like!
Directions:
Preheat oven to 300°F. Line a baking sheet with parchment paper and draw a 9 inch circle on it. In a large bowl beat egg whites until they’re stiff but not dry. Gradually add sugar ( about 1 tablespoon at a time) beating well until thick and glossy. Gently fold in vanilla extract, Lemon juice and cornstarch. Now you can spoon the mixture inside the circle drawn on the parchment paper. Spread the mixture toward The outside edge working from the middle so that the edge gets slightly higher. This will act as a rim and will make it look almost like a shallow.( that way your fruit and whip cream have somewhere to sit later ). Bake for one hour when it’s done let it cool on a wire rack. Once it’s all cool you can fill the center with of The meringue with the whip cream and fruit. Now dig in and enjoy!

I have to admit that I have never made a meringue. Guess I was too afraid I would mess it up. I’ll have to get over my fear of failure and give it a try!
