Mandazi
Mandazi, is a form of fried bread that originated on the Swahili Coast. It is also known as bofrot or puff puff in Western African countries such as Ghana and Nigeria. It is one of the principal dishes in the cuisine of the Swahili people who inhabit the Coastal Region of Kenya and Tanzania. It is offended cooked in Nigeria and is know as puff puff!

Nigeria 🇳🇬
Nigeria, an African country on the Gulf of Guinea, has many natural landmarks and wildlife reserves. Protected areas such as Cross River National Park and Yankari National Park have waterfalls, dense rainforest, savanna and rare primate habitats. One of the most recognizable sites is Zuma Rock, a 725m-tall monolith outside the capital of Abuja that’s pictured on the national currency.

Arroz con dulce
Ingredients:
1 1/2 cups rice, 4 1/2 cups coconut milk, 1 1/2 teaspoon salt, 3 cinnamon sticks, 2 ounces ginger, 6 whole cloves, pinch of nutmeg, 1 1/2 cups sugar, 1/2 cup of raisins.
Directions:
Rinse rice and then cover it in water and let it soak for up two hours. The rice will soak up the water, so make sure you have a couple extra inches of water above the top layer of rice. Once the rice has been soaking for around an hour and forty minutes,combine the coconut milk with the salt, cinnamon sticks,ginger,cloves and nutmeg in a medium size pot. Bring to a boil over high heat. Then reduce the heat to medium cover and boil for 15 minutes. Drain the rice thoroughly and add to the pot. Mix and bring to a boil over medium heat. Add sugar and raisins. Reduce heat to medium low, cover and simmer for 15 to 20 minutes or until rice is tender and the liquid is absorbed. Remove the cinnamon sticks and cloves. Then spoon the rice onto a flat serving platter. Allow it to cool at room temperature. Once it’s cool you can eat it!

Pavlova
Pavlova is a dessert that’s often part of the Christmas day meal in New Zealand. It’s a crisp white meringue that’s top with fresh fruit and whipped cream.
Ingredients:
4 egg whites, 1 1/4 cups white sugar, 1 teaspoon vanilla extract, 1 teaspoon lemon extract, 2 teaspoons cornstarch, whipped cream, and mixed fruit any kind you like!
Directions:
Preheat oven to 300°F. Line a baking sheet with parchment paper and draw a 9 inch circle on it. In a large bowl beat egg whites until they’re stiff but not dry. Gradually add sugar ( about 1 tablespoon at a time) beating well until thick and glossy. Gently fold in vanilla extract, Lemon juice and cornstarch. Now you can spoon the mixture inside the circle drawn on the parchment paper. Spread the mixture toward The outside edge working from the middle so that the edge gets slightly higher. This will act as a rim and will make it look almost like a shallow.( that way your fruit and whip cream have somewhere to sit later ). Bake for one hour when it’s done let it cool on a wire rack. Once it’s all cool you can fill the center with of The meringue with the whip cream and fruit. Now dig in and enjoy!

New Zealand is an island country in the southwestern Pacific Ocean. It consists of two main landmasses—the North Island and the South Island —and more than 700 smaller islands, covering a total area of 268,021 square kilometres.
Gozinaki Candy
Gozinaki candy is something that many Georgians like to eat around Christmas.
Ingredients:
2 lb shelled walnuts. 10 tablespoons honey. 2 tablespoons sugar.
Directions: pour the walnuts into a pan and heat on low-medium heat for 2-3 minutes. Be careful you don’t want to burn them. Remove them and let them cool slightly. If there are any skins left on the walnuts,gentle remove them. Then chop the up. In a different pan,add the honey and heat on a low temperature,stirring continuously for 8-10 minutes.Make sure the honey is nice and thick! Lower the temperature and add sugar,stirring until it blends in. Gradually add the chopped walnuts to the honey and sugar mix.Continue stirring for another 2-3 minutes. If you have a wooden chopping board,wet the surface and then wipe off any extra water. Add some of the of the walnut and honey mixture to the board.(If you don’t have a chopping board,you can use a cookie sheet.) Flatten the mixture with the back of the spoon or a rolling pin that has also been dampened with water.Make it into a nice square!When you’re done, you can cut the gozinaki into diamond-shaped chucks.Then enjoy this tasty treat!
